Avocado Chickpea Delight Bowl
Ingredients:
-30g chickpeas (1 can, drained and rinsed)
-1 ripe avocado
-1 handful fresh cilantro/coriander
-½ red onion, diced
-1 cup paneer (or similar)
-Juice of 1 lime
-1 tsp honey
-Salt and pepper to taste
-1 cup curd
Instructions:
Rinse and drain the chickpeas thoroughly. Dice the ripe avocado, chop the fresh cilantro (including stems for extra flavor), and finely dice half a red onion. Combine all the ingredients in a bowl, adding the paneer, lime juice, honey, and seasoning with salt and pepper. Toss everything together until well mixed.
